Recipe: Kilkenny Guinness Brown Bread
GUINNESS BROWN BREAD
Kilkenny is renowned for Head Chef Lynn’s famous Guinness Bread. This recipe is a longstanding favourite for Kilkenny Café visitors and will make a rich, nutty loaf. The texture reminds of soda bread but with a richer flavour attributed to the inclusion of Ireland’s most famous beverage.
450g (15oz) of Brown Flour
20g (0.71oz) Brown Sugar
2 teaspoons Bread Soda
100g (3.5oz) Chopped Walnuts
25g (0.88oz) Pinhead Oats
500ml (16 fl oz) can of Guinness
65g (2.29oz) of butter melted
2 Tablespoons of Treacle
Pumpkins seed to scatter
Step 1: In a large bowl combine the flour, brown sugar, bread soda( sieved), Pinhead oats and walnuts, mix well together.
Step 2: Melt the butter and add with the treacle and mix through.
Step 3: Pour in the Guinness and bring together gentle yet thoroughly.
Step 4: Put the mixture into an oiled bread tin and sprinkle with some pumpkin seeds.
Step 5: Bake at 160 degrees (320F) for 60 minutes.
Step 6: Cover with a dry cloth once out of the oven.
