Recipe Heirloom Carrot Salad with sweet orange and thyme vinaigrette (V)
During September, Kilkenny is celebrating Irish craft and design with Fashion pop-up in store. Much like Pearl Reddington's designs, our starter is handcrafted and locally sourced using traditional ingredients like carrot and thyme. We've added a bright hint of zesty sweet orange as a nod to Pearl Reddington's colour detail and modern take on traditional Irish knitwear. Enjoy!
6 tbs. olive oil
¼ cup rice vinegar
¼ cup orange juice
2 tbs. Fresh thyme extra for garnish
1 tbs. Finely chopped shallots
1 tsp. Honey
½ sb Heirloom carrots
⅓ cup of pine nuts
⅓ cup chopped flat-leaf parsley
Step 1: Whisk together oil, vinegar, orange juice, thyme, shallots and honey in a bowl.
Step 2: Hold each carrot over the bowl containing the vinaigrette and using a vegetable peeler, peel long thin strips into the bowl. Toss to mix.
Step 3: Toast pinenuts, add to carrot mixture, sprinkle with parsley and fresh thyme leaves, correct seasoning.
